Guacamole

Here is my personal recipe for guacamole. I use this as a spread for wraps (low carb whole wheat) instead of using mayonnaise. Avocados contain monounsaturated and polyunsaturated fat (the good fats) that help lower cholesterol. Here is a helpful link about the nutritional benefits of avocados. (Avocado Information)
  • 3 avocados – peeled, pitted, and mashed
  • 1 1/2 lime, juiced
  • 1 teaspoon salt
  • 3/4 cup of red diced onion
  • 4 tablespoons chopped fresh cilantro
  • 2 roma tomatoes, diced
  • 3 teaspoon granulated garlic
  • 1 whole jalapeño, diced with seeds removed
  • 2 tablespoon of extra virgin olive oil
Serving size is 2tablespoons 70calories

Combine all ingredients in a mixing bowl with a spatula or I find it easier to use my hands. Cover bowl with seran wrap and let the flavors marinate together for about 30 minutes in the fridge.
